Spelt Rolls


5 cups spelt flour
2 tablespoons dry yeast
cup honey
1 cups lukewarm buttermilk
cup butter; melted
1 teaspoon baking soda
1 teaspoon salt


Preheat oven to 210C.

Place dry yeast in bowl. Add the honey and while stirring, pour in buttermilk. Continue to stir until yeast is dissolved. Stir in melted butter and mix. Mix in 2 cups of flour, baking soda and salt. Beat well, cover, and set in warm place until mixture rises about 2" up the bowl(about 25 minutes).

Stir down and add enough remaining flour to make a soft dough. Beat well. Cover and let rise in a warm place until nearly doubled in bulk (about 30 minutes).

Punch down. Divide dough into 24 pieces and form each piece into a ball. Place 1" apart on greased trays. Let rise until doubled in bulk (about 10 minutes).

Bake rolls for about 15 minutes or until golden brown.
